Cooling racks are, at first glance, awfully basic little contraptions. A cooling rack is just a simple piece of wire mesh, after all... but what an important job that simple piece of mesh has.

For one thing, you can be reasonably certain that you're putting your freshly baked goods on a pristine surface if you're using a cooling rack. The other big benefit here is that cooling racks ensure that all sides of your cookies or cakes cool uniformly, so cracks and breaks are minimised. Of course, a non-stick cooling rack makes things even easier.
