Roasters & Roasting Pans

First and foremost, a roaster or roasting pan is designed to withstand the very high heats found in the oven. Another good thing to know is that shallower roasting dishes tend to cook more quickly, but deeper roasting pans allow you to put not only a large piece of meat in there, but all the veggies and trimmings for your Sunday dinner.

Do you get a roaster with a rack or without a rack? Well, the rack will brown things more evenly, and it will keep the meat out of the juices and fats.
