Stages 1 and 2 feature 100% diamond coated disks while Stage 3 is a stropping/polishing disk. All of this results in a superbly sharp blade. To be more precise, Stage 1 is used for excessively dull or damaged blades or for maximum edge "bite." This is full-on sharpening. The finer grit diamonds of Stage 2 create a second bevel and are perfect for routine sharpening. Stage 3's patented material creates a third micro-bevel and polished microflute cutters along the super-sharp edge.

In short, you'll be able to select the edge you want for the knife or task at hand.
